What do you when it’s hell has frozen over outside and you realize you don’t have any confectioners sugar? Make ghetto frosting! The original idea was for heavenly chocolate mouse on top, but I can’t separate an egg for the life of me and ran out of chocolate to melt. So I tried buttercream, well I had none of that sweet powdered sugar, so I was back to the drawing board. Cue a lot of cussing and throwing various kitchen items. A light bulb lit up over me like an old cartoon, or perhaps faulty wiring but at this point I didn’t care, I had an idea. After a couple failed attempts at frosting I perfected some awesome whipped cream frosting.
So without further ado, I bring you the ghetto frosted cupcakes.
1 1/4 cup all purpose flour
1/2 cup unsweetened cocoa powder
3/4 tsp baking powder
1 cup granulated sugar
1/3 cup vegetable oil
1 tsp vanilla
3/4 cup milk
Preheat the oven to 350 and get your pan ready. Mix flour, cocoa and baking powder. In another bowl mix the sugar, oil, egg and vanilla until it’s smooth. Add the mixed flour, cocoa and baking powder as well as the milk and mix it all together, this is a good time to use a mixer. Pour it into your pan and bake about 25 minutes.
For the ghetto whipped cream frosting, take a spray can of whipped cream and fill a large bowl with it. Whisk it til it’s a smooth consistency, add 1/2 cup of sugar, 1/2 cup of unsweetened cocoa. Beat with a mixer, adding corn starch as you until it is a nice thick frosting consistency. Pipe it on your cooled cupcakes and step back and admire your masterpiece.
